The milk for this pecorino comes exclusively from the sheep on our farm. Our sheep graze freely across our fields and are carefully monitored to ensure the highest quality. The milk is first pasteurised, and the cheese’s distinctive flavor comes from the freshness of the milk. Sheep’s milk cheese made from pasteurised milk. Fresh pecorino, aged for a maximum of one month.
