The milk for this pecorino comes exclusively from our own sheep. Our flock grazes freely across our fields and is carefully monitored to ensure a product of exceptional quality. The milk is gently pasteurised, and its distinctive flavour develops through careful ageing.. Cheese made from pasteurised sheep’s milk.Aged pecorino, matured for 15–20 months.
