The milk for this pecorino comes exclusively from the sheep on our farm. Our sheep graze freely across our fields and are carefully monitored to ensure a product of the highest quality. The milk is first pasteurised, and its distinctive flavor comes from the natural freshness of the milk. Cheese made from pasteurised sheep’s milk. Aged for a maximum of 40 days.
